Polyphenols, great source of longevity


The unusual experience of a cough or tingling in the throat after having a sip of Cretan extra virgin olive oil can be related to polyphenols. Polyphenols, according to Prokopis Magiatis, professor of University of Athens, Faculty of Pharmacy, are responsible for the distinctive taste of Cretan extra virgin olive oil, specifically for its spicy and bitter flavor.
Polyphenols are one type of health-protective antioxidants which may protect from heart diseases, high blood pressure, cholesterol and certain types of cancer.
The scientific community of Crete is willing to work side by side with the farmers and producers of Crete, in order to measure the levels of polyphenols in our olive oil, but also to use it for marketing purpose.
